Community Gardeners Share Summer Salads

For the August Community Gardener Potluck, Garden Manager Mal issued a challenge: bring your Best Fresh-from-the-Garden Summer Salad!

The Gardeners did not disappoint!  Pictured here is everyone who brought a salad to share!

Thanks to Community Gardener Julia for sharing the Summer Salad "recipe" she brought to the August Community Garden Potluck.

From Julia:
I don't really use a recipe so I don't have measurements. My favorite way to cook is by taste, sight and smell. Salads are great for that!

Summer Salad:
-Sweet peppers of any color will do, but yellow gives a great pop of color
-Tomatoes
-Cucumbers
-Onion (purple, white, or yellow) purple gives a great color, while white have less of a bite
-mix of fresh italian herbs- parsely, basil, oregano, thyme 
-Olive oil
-Balsamic vinegar

Chop all veggies into bite size pieces. (Remove seeds from the cucumbers before chopping). The amount of each veggie it's determined by sight, what I need to use up from the garden, and what I've got on hand, but I try to have a fairly even ratio of each veg. 
Then I mince the herbs and sprinkle in- I like alot of herbs, but that can be done to taste. 
Finish with plenty of salt and drizzle with olive oil and a touch of balsamic vinegar to taste. Sometimes I'll sprinkle in some garlic powder too.
